Mediterranean Chicken Wings loaded with robust flavors
Ingredients
- 3 pounds fresh chicken wings, rinsed and patted dry
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1/4 cup olive oil
- 2 tablespoons fresh rosemary, roughly chopped
- zest of a large lemon
- 1 teaspoon red pepper flakes
- 1 large entire garlic bulb, sliced in half
- 2 lemons, sliced in half
Instructions
- Preheat oven to 400°
- Heat cast iron skillet over medium-high heat.
- Add 1/4 cup of olive oil
- Season the chicken wings with salt and pepper
- Add chicken to skillet and cook until golden brown, 3 to 4 minutes per side
- Turn off heat and remove the skillet from the flame
- Add chopped rosemary, lemon zest, and pepper flakes and stir to coat the wings
- Slice off the garlic bulb in half, exposing the inner cloves, and add it face down in the skillet
- Slice the lemons in half, squeeze some juice over the wings and add it face down in the skillet
- Place the entire skillet in a preheated 400° oven and bake for 25 minutes, or until the internal temperature reaches 165°.
