Yiayia's Hummus

A simple Greek classic! Enjoy with some warm pita bread and fresh olives.

Ingredients

Instructions

  1. Put the garbanzo beans into a food processor and purée, adding the garlic and seasoning lightly with salt and pepper.
  2. In a small bowl, combine tahini with 1-2 tbsp. of water and beat it with a fork.
  3. Spoon the bean purée into a large bowl.
  4. Stirring constantly with a fork, gradually pour in that tahini mixture, then the olive oil, then the lemon juice. Make sure you do this a little at a time, and beat it until it's all smooth.
  5. Chill in the refrigerator for at least one hour before serving.
