Yiayia's Hummus
A simple Greek classic! Enjoy with some warm pita bread and fresh olives.
Ingredients
- 1 cup garbanzo beans
- 2 garlic cloves, finely chopped
- Salt and pepper to taste
- 4 tbsp. tahini + 2 tbsp. water
- 4 tbsp. olive oil
- 1 to 2 tbsp. lemon juice
Instructions
- Put the garbanzo beans into a food processor and purée, adding the garlic and seasoning lightly with salt and pepper.
- In a small bowl, combine tahini with 1-2 tbsp. of water and beat it with a fork.
- Spoon the bean purée into a large bowl.
- Stirring constantly with a fork, gradually pour in that tahini mixture, then the olive oil, then the lemon juice. Make sure you do this a little at a time, and beat it until it's all smooth.
- Chill in the refrigerator for at least one hour before serving.
